Pumpkin Chocolate Chip Muffins




1 (15oz) can pumpkin puree
1 tsp. vanilla extract
2 C. all-purpose flour
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg
1 C. butter, melted
1 C. brown sugar
1 tsp. baking soda
1/2 C. dark chocolate chips
1/2 tsp. salt
1/2 tsp. ginger
1 C. sugar
4 large eggs, lightly beaten



In medium bowl, whisk flour, baking soda, baking powder, salt, cinnamon, ginger and nutmeg. In another bowl, whisk brown sugar, sugar, vanilla, butter and eggs. Add dry ingredients and whisk till smooth. Whisk in pumpkin. Add chocolate chips. Bake at 350* for 20-25 mins.
